How To Turn Cake Mix Into A Dessert Bar

Transforming a box of cake mix into rich, fudgy dessert bar is incredibly simple and requires just a few tweaks to the ingredients. Here’s how you do it:

Adjust the Liquid Ingredients
Instead of following the cake mix instructions, reduce the liquid ingredients. Use eggs and oil for a richer, denser batter.

Skip the Water
Cake recipes often use water to create a light and fluffy crumb. For dessert bars like brownies, skip the water entirely to keep the batter thick and fudgy.

Ingredients and Substitute

Cake Mix

  • What You’ll Use: Vanilla or white cake mix is the main ingredient in this recipe. It provides the signature flavor and color that you’ll need for this dessert bar.
  • Substitute: You can use any other cake mix flavor like chocolate or red velvet. Just keep in mind that the flavor and appearance will change.

Eggs

  • What You’ll Use: Eggs add structure and moisture to the dessert bar. This small-batch recipe uses one eggs for a fudgy texture.
  • Substitute: For an egg-free option, use 1/4 cup of unsweetened applesauce or a flax egg (1 tablespoon ground flaxseed mixed with 2.5 tablespoons water) per egg.

Vegetable Oil

  • What You’ll Use: Vegetable oil adds richness and keeps the bar moist.
  • Substitute: You can swap vegetable oil with melted butter for a slightly richer flavor or use coconut oil for a subtle hint of coconut.

White Chocolate

  • What You’ll Use: This will be used to coat the top part of your dessert bar
  • Substitute: You can use milk chocolate chips, dark chocolate chips, or even chopped nuts if you prefer. For a festive touch, use red and white candy melts.

Pro Tips

  1. Mix Only Until Combined – Stir the ingredients together just until incorporated. Overmixing can make the brownies too dense or dry.
  2. Don’t Over Bake – Pour the thick batter into a greased or parchment-lined pan, spread it evenly, and bake at the specified temperature. Brownies typically bake at a lower temperature than cakes to maintain their gooey center. When you do the toothpick test, take it out of the oven as soon as only a few moist (not wet) crumbs come out.
  3. Let them cool – The brownies will continue baking for a few minutes in the pan after being removed from the oven. Don’t serve them until they have time to cool!

Equipment

  • 1 Large mixing bowl
  • 1 Shaped silicone mold
  • 1 Spatula

Ingredients

  • 1/2 box 15.25 oz Betty Crocker White or Vanilla Cake Mix (or other brand)
  • 1/4 cup vegetable oil
  • 1/2 cup white chocolate for melting

Instructions

  • Preheat the oven to 350°F
  • In a large bowl, add 1/2 the packaging of the cake mix, egg, and 1/4 cup of oil. Mix until just combined.
  • Transfer the batter into your silicone mold and bake for 18-22 minutes (see Note 1) or until a toothpick inserted in the center of the pan comes out with moist crumbs. Be careful not to overbake. Allow the dessert bar to cool completely before unmolding.
  • While waiting for the dessert bar to cool, put 1/2 cup of white chocolate into a microwave-safe bowl. Microwave in 20-second interval until completely melted. Don't forget to mix in between microwaving.
  • Add a drop of oil-based food coloring into the melted chocolate, if desired (see Note 2).
  • Carefully add the melted chocolate into the bottom of the same silicone mold used for baking. Use the back of a teaspoon to spread it evenly if needed.
  • Put back your cooled dessert bar into the mold. Make sure it touches the melted chocolate at the bottom and gently presses on it. Refrigerate for at least 20 minutes before removing from the mold.

Notes

Note 1: Baking time varies depending on the size of your silicone mold.
Note 2: Do not use water-based food coloring as it will make your chocolate split. Oil-based coloring works best for chocolates. You can use gel food coloring if you are only going to add a drop or 2. Adding more will also cause the chocolate to seize.
