Ingredients
- 2 ½ cups all-purpose flour
- 2 cup quick cook oats
- 1 tsp salt
- 1 tsp baking soda
- 1 tsp vanilla extract
- 2 pcs eggs
- 2 cup light brown sugar
- 1 cup butter room temp
- 1 tsp vanilla extract
- 3 tbsp butter
- 1 can (14 ounce) condensed milk
- 1 pack (12 ounce) semi-sweet chocolate chip
Instructions
- Preheat oven to 350*F and line a 9×13 baking dish with parchment paper. Set aside.
- In a bowl, add in 2 cups of quick cook oats, 2 ½ cups of all-purpose flour, 1 tsp salt and 1 tsp baking powder. Mix well.
- In a separate large bowl, add 1 cup of room temperature butter and brown sugar. Using a mixer, beat until the mixture is nice and creamy.
- Add the 2 eggs and 1 teaspoon vanilla extract. Mix and scrape the sides of bowl as needed.
- Incorporate the dry ingredients into the butter mixture. This will result to a thick dough. Keep mixing until all the oats and flour are mixed in.
- Press ⅔ of the dough in the bottom of your prepared baking dish.
- In a microwave safe bowl, mix together 12 ounce semi-sweet chocolate chips, 1 can condensed milk, and 3 tbsp butter. Heat this mixture in the microwave in 30 second intervals. Stir in between and repeat until it becomes smooth and creamy. Then, add 1 tsp vanilla extract.
- Gently pour and spread the chocolate fudge filling over the dough.
- Sprinkle remaining dough over the top of the fudge filling.
- Bake for 20-25 minutes or until golden brown (not burnt). Let it cool and then cut into 1 ½ inch bars.
