Watermelon Fruit Roll Ups

Make delicious watermelon fruit roll-ups with just 2 simple ingredients. This easy, healthy snack is perfect for kids and adults alike!

Equipment

  • 1 Blender/Food processor
  • 1 Mesh strainer
  • 1 Bowl
  • 1 Baking sheet
  • 1 Parchment paper

Ingredients
  

  • 8 cups watermelon, diced
  • 3/4 cup sugar

Instructions
 

  • Preheat oven to 170F°. Line you baking sheet with parchment paper.
  • Puree the watermelon, and pass the juice through a mesh strainer. Drain almost all of the liquid. You will only use the watermelon solids in this recipe.
  • Combine watermelon solids with sugar, discarding any seeds.
  • Spread the mixture into an even layer, roughly 1/8-inch thick. Bake for 3 hours or until no longer wet, but still slightly tacky. Rotate pans 180° and swap levels each hour until it's done. (See Notes section)
  • Transfer fruit leather to a cutting board, cut into desired sizes. Store on parchment paper in an airtight container.

Notes

Cook time will vary depending on the thickness of your mixture and oven temperature.
